Raicilla Tasting Dinner

Raicilla was originally distilled as the hooch for farmers and fishermen in the western part of Jalisco, it was taxed by the Spanish crown during the 18th century to make way for imported liquor and wine. As a result, the spirit moved underground, and up until recently, it was illegal and production was anything but organized.
Many different species of agaves are used to produce Raicilla, including Agave angustifolia (“Chico Aguiar” or “Yellow”), Agave maximiliana, Agave inaequidens and Agave rhodacanta.
